Hebridean Hogget

At Aurox, we believe that animals can only develop deep, complex flavours over time. That's why we exclusively offer hogget—lambs that have had the benefit of two full summers grazing over rich, wild pastures.

This unhurried approach results in a depth of flavour that is incomparable to modern lamb. Our current offering is the exceptional Hebridean Hogget, reared for us by our friend and neighbour, Julius Roberts, on his family farm in Dorset.

The Hebridean is a rare and ancient breed from the northern islands of Scotland. These small, hardy sheep are famed for producing richly marbled, fine-textured meat with a complex and robust flavour that speaks of the wild pastures they call home.
