Animals can only develop deep, complex flavours over time. We exclusively offer hogget—lambs that have had the benefit of two full summers grazing over rich pastures. This approach results in a depth of flavour that is incomparable to lamb. Our current offering is Hebridean Hogget, reared for us by our friend and neighbour, Julius Roberts, on his family farm in Dorset.
The Hebridean is a rare breed from Scotland. These hardy sheep are famed for producing richly marbled, fine-textured meat with a complex flavour that speaks of the wild pastures they call home.
We back ourselves completely, so if you're not convinced there’s a point of genuine difference in the flavour of our meat, please call us and we will make it right.
